Dave's Gold Medal Beer Batter
(fish, wild turkey, country fried steak)

1 package "Jiffy" corn muffin mix
1/2 cup pancake flour, any brand
1 T cornstarch
dash of nutmeg
1 T canola oil
1 T "Old Bay" seasoning
1 can light beer
Whisk all the ingredients together. Batter should not be too thick, add more beer if needed.
Note: fish, etc. must be patted dry before dipping.
